Creamy Peanut and Vegetable Chinese Noodles

Peanut Noodles

Ingredients for the peanut sauce:

  1. 4 tbsp peanut butter
  2. 4 tbsp soy sauce
  3. 4 tbsp sweet chilli sauce
  4. ½ cup water
  5. 2 tbsp maple syrup

Ingredients for the stir-fry:

  1. 2 tbsp oil
  2. Salt and black pepper to taste
  3. 2 clove garlic
  4. 2 piece ginger, fresh (thumb sized)
  5. 1 onion
  6. 2 cups of vegetables, fresh or frozen (choose your favourite: broccoli, carrots, cauliflower, baby corn, etc.)
  7. 2 big handful snow peas (optional)
  8. 2 cup noodles
  9. 2 handfuls of peanuts

Steps For Peanut noodles:

  1. Chop the vegetables into bite-sized pieces. Dice the garlic and ginger.
  2. For the sauce: grab a large bowl and chuck in the peanut butter, soy sauce, sweet chilli sauce, water, syrup. Mix well with a spoon ‘til it’s a nice and creamy sauce.
  3. Cook the noodles so you have them at hand when the stir-fry comes together. When ready, drain and rinse under cold water (they’ll stick together less).
  4. In a large pan, heat the oil.
  5. Add the garlic, ginger, and onion.
  6. Around 40 seconds later add the thawed veggies. (If you just use fresh veg, throw in everything at once).
  7. Stir it well for about 4-5 minutes.
  8. Reduce the heat a little and add the sauce and noodles. It’ll quickly begin to boil.
  9. Make sure it’s all nice and creamy. Add a little more water, if not!
  10. Add some peanuts
  11. Let it simmer for another 3-5 minutes. Enjoy!
Chinese Fried Rice

Ingredients for the sauce:

  1. 2 tbsp soy sauce
  2. 2 tsp white wine vinegar
  3. 2 tsp olive oil (or any other oil you have at hand)
  4. 1 tsp maple syrup

Ingredients for fried rice:

  1. 2 medium eggs (Skip this if you don't eat egg)
  2. Salt and black pepper to taste
  3. 2 tbsp any oil
  4. 3 cups rice (cooked)
  5. 1 onion (or 2 spring onions, finely chopped)
  6. 2 cups veggies of your choice (frozen vegetables are fine too, but make sure to thaw them before frying)

Steps For Fried Rice:

  1. In a small bowl mix together the ingredients for the sauce. Then chop your veggies into bite sized pieces.
  2. Get a pan to high heat, add oil and pour in the egg. While scrambling add a small dash of salt and vinegar. The egg should be done in about a minute, then set aside in a bowl.
  3. Add another tbsp of oil into the pan on high heat and add the onion. Let it fry for about 30 seconds (NOTE: If you use spring onions, add them in the end instead!).
  4. Now is the time to put your veggies in the pan. Stir fry for 3-5 minutes.
  5. Reduce the heat, add the rice, sauce and your eggs. Stir well. Now you can safely add your spring onions too.
  6. Done!
