Peanut Noodles |
Ingredients for the peanut sauce: - 4 tbsp peanut butter
- 4 tbsp soy sauce
- 4 tbsp sweet chilli sauce
- ½ cup water
- 2 tbsp maple syrup
| Ingredients for the stir-fry: - 2 tbsp oil
- Salt and black pepper to taste
- 2 clove garlic
- 2 piece ginger, fresh (thumb sized)
- 1 onion
- 2 cups of vegetables, fresh or frozen (choose your favourite: broccoli, carrots, cauliflower, baby corn, etc.)
- 2 big handful snow peas (optional)
- 2 cup noodles
- 2 handfuls of peanuts

Steps For Peanut noodles: - Chop the vegetables into bite-sized pieces. Dice the garlic and ginger.
- For the sauce: grab a large bowl and chuck in the peanut butter, soy sauce, sweet chilli sauce, water, syrup. Mix well with a spoon ‘til it’s a nice and creamy sauce.
- Cook the noodles so you have them at hand when the stir-fry comes together. When ready, drain and rinse under cold water (they’ll stick together less).
- In a large pan, heat the oil.
- Add the garlic, ginger, and onion.
- Around 40 seconds later add the thawed veggies. (If you just use fresh veg, throw in everything at once).
- Stir it well for about 4-5 minutes.
- Reduce the heat a little and add the sauce and noodles. It’ll quickly begin to boil.
- Make sure it’s all nice and creamy. Add a little more water, if not!
- Add some peanuts
- Let it simmer for another 3-5 minutes. Enjoy!

Chinese Fried Rice |
Ingredients for the sauce: - 2 tbsp soy sauce
- 2 tsp white wine vinegar
- 2 tsp olive oil (or any other oil you have at hand)
- 1 tsp maple syrup
| Ingredients for fried rice: - 2 medium eggs (Skip this if you don't eat egg)
- Salt and black pepper to taste
- 2 tbsp any oil
- 3 cups rice (cooked)
- 1 onion (or 2 spring onions, finely chopped)
- 2 cups veggies of your choice (frozen vegetables are fine too, but make sure to thaw them before frying)

Steps For Fried Rice: - In a small bowl mix together the ingredients for the sauce. Then chop your veggies into bite sized pieces.
- Get a pan to high heat, add oil and pour in the egg. While scrambling add a small dash of salt and vinegar. The egg should be done in about a minute, then set aside in a bowl.
- Add another tbsp of oil into the pan on high heat and add the onion. Let it fry for about 30 seconds (NOTE: If you use spring onions, add them in the end instead!).
- Now is the time to put your veggies in the pan. Stir fry for 3-5 minutes.
- Reduce the heat, add the rice, sauce and your eggs. Stir well. Now you can safely add your spring onions too.
- Done!
