Vanilla Cake: Time: About 50 minutes Yield: Makes 24 Cookies |
Ingredients: - 1 cup (2 sticks) unsalted butter room-temp, plus more for pans
- 2 ½ cups all-purpose flour, plus more for pans
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon salt
- 1 ½ cup sugar
- 2 large eggs, 3 large egg yolks (you can come to class with 5 uncracked eggs, we will separate egg yolks together)
- 3 large egg yolks
- 2 teaspoons vanilla extract
- 1 cup low-fat buttermilk, or you can also use 1 cup yogurt
| Appliances: - 2 round 8’ cake pans, if u dont have, you can also use a glass baking pan, or any other cake pan

- 1 medium sized bowl
- 1 large bowl
- 1 small bowl

Steps: - Preheat the oven to 350℉. Butter and flour 2 cake pans, tapping out excess flour.
- Separate egg yolks in a small bowl. Save for later.
- In a medium bowl, whisk flour, baking powder, baking soda, and salt.
- In a large bowl, using an electric mixer, beat butter and sugar until light and fluffy.
- With the mixer on low, beat in eggs and yolks, one at a time. Then beat in vanilla.
- Alternately beat in flour mixture and buttermilk, beginning and ending with flour mixture; mix just until combined.
- Divide batter between pans; smooth tops.
- Bake at 350℉ until cakes pull away from sides of pans, 32 to 35 minutes.
- Let cool for 10 minutes. Run a knife around the edges of pans and invert cakes onto a wire rack or cutting board. Let cool completely.

Frosting: |
Ingredients: - 6 cups powdered/confectioners sugar
- 1 ½ cup softened butter (3 sticks)
- 3- 4 teaspoons vanilla extract
- 2- 3 tablespoons milk
- Food coloring (optional)

- Decorating bags or ziplock
- Frosting spatula or a butter knife
- Baking spatula or spoon
- Electric hand mixer/ Kitchen aid

Steps: - Combine the softened butter and vanilla into a bowl. Mix for 5 minutes.
- Add in sugar and alternate with milk, and mix until consistency is good.
- Add food coloring (optional)
- Take one cake and put on a plate. Then put a layer of frosting on the cake. Spread evenly.
- Take the other cake and put on top of the frosting, then cover the whole cake with the remaining frosting. Decorate as you wish, with sprinkles or write
- something on the cake!
