Vanilla Cake:
Time: About 50 minutes     Yield: Makes 24 Cookies

Ingredients:

  1. 1 cup (2 sticks) unsalted butter room-temp, plus more for pans
  2. 2 ½ cups all-purpose flour, plus more for pans
  3. ½ teaspoon baking powder
  4. ½ teaspoon baking soda
  5. 1 teaspoon salt
  6. 1 ½ cup sugar
  7. 2 large eggs, 3 large egg yolks (you can come to class with 5 uncracked eggs, we will separate egg yolks together)
  8. 3 large egg yolks
  9. 2 teaspoons vanilla extract
  10. 1 cup low-fat buttermilk, or you can also use 1 cup yogurt

Appliances:

  1. 2 round 8’ cake pans, if u dont have, you can also use a glass baking pan, or any other cake pan
  2. Measuring spoons
  3. A spoon/ baking spatula
  4. Oven gloves
  5. A knife
  6. A cutting board
  7. 2 plates
  8. A whisk
  9. Hank Mixer/Kitchen aid
  10. 1 medium sized bowl
  11. 1 large bowl
  12. 1 small bowl

Steps:

  1. Preheat the oven to 350℉. Butter and flour 2 cake pans, tapping out excess flour.
  2. Separate egg yolks in a small bowl. Save for later.
  3. In a medium bowl, whisk flour, baking powder, baking soda, and salt.
  4. In a large bowl, using an electric mixer, beat butter and sugar until light and fluffy.
  5. With the mixer on low, beat in eggs and yolks, one at a time. Then beat in vanilla.
  6. Alternately beat in flour mixture and buttermilk, beginning and ending with flour mixture; mix just until combined.
  7. Divide batter between pans; smooth tops.
  8. Bake at 350℉ until cakes pull away from sides of pans, 32 to 35 minutes.
  9. Let cool for 10 minutes. Run a knife around the edges of pans and invert cakes onto a wire rack or cutting board. Let cool completely.
Frosting:

Ingredients:

  1. 6 cups powdered/confectioners sugar
  2. 1 ½ cup softened butter (3 sticks)
  3. 3- 4 teaspoons vanilla extract
  4. 2- 3 tablespoons milk
  5. Food coloring (optional)

Appliances:

  1. 1 large bowl
  2. Decorating bags or ziplock
  3. Frosting spatula or a butter knife
  4. Baking spatula or spoon
  5. Electric hand mixer/ Kitchen aid

Steps:

  1. Combine the softened butter and vanilla into a bowl. Mix for 5 minutes.
  2. Add in sugar and alternate with milk, and mix until consistency is good.
  3. Add food coloring (optional)
  4. Take one cake and put on a plate. Then put a layer of frosting on the cake. Spread evenly.
  5. Take the other cake and put on top of the frosting, then cover the whole cake with the remaining frosting. Decorate as you wish, with sprinkles or write
  6. something on the cake!
