Crepes, Omelet / scrambled eggs, fruit smoothie

Crepes:
Time: About 15 minutes     Yield: Makes 6 Crepes

Ingredients:

  1. 2 eggs
  2. 1 or ¾ cup mil
  3. 1 tablespoon melted butter
  4. ½ or ⅔ cup all-purpose flour
  5. 1 tablespoon sugar
  6. Pinch of salt
  7. ¼ teaspoon vanilla

Filling:

  1. ¼ cup thin cut strawberries with whipped cream
  2. ⅓ cup thin cut bananas with nutella spread
*Come to class with one or both of these fillings to fill the crepes with*

Steps:

  1. In a bowl, whisk eggs, milk, melted butter, vanilla together.
  2. Add in flour, sugar, salt while continuing to whisk.
  3. Mix till smooth, consistency should be thin.
  4. Spray a flat pan with oil, then pour the batter and rotate the pan till the batter is equally covering the pan.
  5. Cook 1-2 minutes on each side, or until golden brown.
  6. For Nutella Banana crepe: Spread nutella on ½ side of the crepe, and add bananas on top, then fold over the crepe and fold again till it becomes a triangle. Finish with a nutella drizzle or light powdered sugar on top. For Strawberry Whipped Cream crepe: Pread whipped cream on ½ side of the crepe, and add the slices of strawberries on top, then fold over the crepe, and fold again till it becomes a triangle. Finish with some whipped cream on top.

Omelet/ Scrambled Eggs:
Time: About 5 minutes   

Ingredients:

  1. 2 eggs
  2. Salt (according to taste)
  3. Pepper (according to taste)
  4. 1 tablespoon butter
  5. Parsley (optional)

Steps:

    For Omelet:
  1. Heat a pan over medium-low heat.
  2. Cut the butter into small pieces or melt the butter and put it in a bowl.
  3. Crack the eggs into the bowl with the butter. Add in salt and pepper.
  4. Beat the egg, saalt, butter, pepper together till lots of bubbles form.
  5. Pour the mixture into the pan and slowly rotate so the liquid cooks evenly.
  6. Check if the side faced down is cooked, then flip the omelet.
  7. Repeat step 6, then transfer omlet to a plate. Finish with parsley on top.
    For Scrambled eggs:
  1. Heat a pan over medium-low heat.
  2. Crack the eggs into a bowl. Beat until lots of bubbles form.
  3. Pour mixture into the pan and begin scrambling the eggs. Add the salt, pepper, and butter.
  4. Continue scrambling the eggs until cooked fully.
  5. Be sure not to overcook eggs, they will feel like rubber if overcooked.
  6. Transfer onto a plate, finish with parsley on top.

Fruit Smoothie:
Time: 10 minutes    *freeze fruit overnight and till class starts*

Ingredients:

  1. ½ cup frozen mango (cut in pieces)
  2. ½ cup frozen strawberries (cut in pieces)
  3. 1 frozen banana (cut into pieces)
  4. ½ cup frozen kiwi (cut into pieces)
  5. ¼ cup orange juice
  6. Mint (optional)
  7. 1 small piece of ginger (optional)

Steps:

  1. Take out your blender, pour in the orange juice.
  2. Add in the mango, strawberries, banana, kiwi, mint, and ginger.
  3. Blend thoroughly
  4. Pour into glasses, Enjoy!
